History of The Mines and Gypsum Grill

The golf course opened in 2005 and was the brainchild of  developer Dan Schimmel. Mines Golf Club houses 21 holes of rolling fairways and undulating bent grass greens located in the City of Grand Rapids.
The course and restaurant get their name from sitting 150 feet above gypsum mines that were utilized as early as the 1860s. The course features 110 feet of elevation change from the highest to lowest point on the course. Designed by renowned golf course architect Mike Devries, he used his ability to use the natural features and undulations, has created a unique golf course and “up north feel” set in a unique urban setting.
In 2021 Dan decided to “retire” from course ownership and the course was purchased by Chris Sobieck and family. Chris is a 25+ PGA Member and was a partner and General Manager at Thornapple Pointe, where he elevated that development renovating the course and adding a new banquet space. Once on site at the Mines, Chris and his team set out to elevate an already great experience which has resulted in the new Gypsum Grill and Event Center.

Meet Our General Manager Zac Williams!

Zac has worked in the hospitality business for 25 years. He gained a wealth of experience working in hotels downtown Grand Rapids and has also operated multiple restaurants and banquet facilities. Zac is a hospitality driven person who loves to elevate service and guest experiences. In his down time, Zac hangs out with his wife Kellie and daughter Victoria, he is also very passionate about cocktails and is excited to show off some of his work at Gypsum Grill.

Meet Our Executive Chef Ryan Wall!

Chef Ryan joins us from the Canopy by Hilton Hotel in downtown Grand Rapids. Ryan has a lot of experience in high volume elevated restaurants, and golf courses. He is an excellent banquet chef as well and is excited to bring our events center to the next level. Some of his passions include live music, spending time with his wife and daughter, and of course traveling to experience different food and beverage experiences.
